Grilled BBQ Lamb with Garlic & Rosemary

If you’ve never tried lamb because you think it might be too strong for your taste, it’s time to find out what you’ve been missing. The key with cooking lamb is to know which ingredients compliment the meat’s unique flavor. Garlic and rosemary make this grilled lamb recipe simple but saporous. This is, in part, due to slicing slits on the meat which allows the flavors from the herbs and spices to permeate the lamb.

One of the advantages of cooking with a leg of lamb is that it usually means you’ll have leftovers, which you can use to make lamb stew, lamb and potato pie, lamb pilaf, and mini lamb shepherd’s pie.

Yields: 20 rolls or 80 pieces

Serving Size: 4 pieces

Preparation & Cooking Time: 2 hours & 40 minutes

Ingredients:

  • 1 leg of lamb
  • 1 shallot, chopped
  • 2 cloves garlic, crushed and minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • Green salad

Instructions:

  • Slice slits on the lamb.
  • In a bowl, mix the shallot, garlic, rosemary, white wine vinegar and olive oil.
  • Coat the lamb with this mixture, making sure it also seeps into the slits.
  • Wrap with cling and refrigerate for at least four hours.
  • Preheat your grill to high.
  • Place the lamb on a baking pan and then put it on the grill.
  • Reduce to medium low heat.
  • Cook for three hours.
  • Let rest for 15 minutes before serving.
  • Serve with green salad.
