Pork Roast with Strawberry BBQ Sauce

If you find yourself in a rut when it comes to barbecue sauces, try this recipe that uses strawberries. This sauce, which brings a fruity and sweet take on conventional barbecue taste, has three strawberry components: fresh strawberries, strawberry nectar, and strawberry jam.

You can use this sauce as you would a regular barbecue sauce. It also works not just with pork but also with chicken. This recipe is ideal if you have a surplus of either fresh or frozen berries.

Yields: 6 servings

Serving Size: 1/2 pound pork loin

Preparation & Cooking Time: 2 hours

Ingredients:

  • 2 tablespoons vegetable oil
  • 4 pounds pork loin

Dry Rub

  • 1 tablespoon brown sugar
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Strawberry Barbecue Sauce

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 jalapeno, minced
  • Salt and pepper to taste
  • 1/4 cup brown sugar
  • 2 cups strawberries, chopped
  • 1/2 cup strawberry nectar
  • 1 tablespoon dry mustard
  • 1/4 cup strawberry jam
  • 1 1/2 cup ketchup
  • 1/4 cup water
  • 1 tablespoon Worcestershire sauce

Instructions:

  • Preheat your oven to 325 degrees F.
  • Coat the pork loin with vegetable oil.
  • In a bowl, mix the brown sugar, smoked paprika, vegetable oil, garlic powder, salt and pepper.
  • Sprinkle this mixture on all sides of the pork loin.
  • Wrap with cling.
  • Refrigerate overnight.
  • In a pan over medium heat, pour two tablespoons of vegetable oil.
  • Saute the garlic, onion and jalapeno.
  • Season with the salt and pepper.
  • Mix in the sugar and strawberries.
  • Cook until the sugar dissolves and the strawberries soften.
  • Add the nectar, mustard, jam, ketchup, water, Worcestershire sauce, salt and pepper.
  • Simmer the mixture for 30 minutes.
  • Place the pork on a roasting pan.
  • Roast for one hour and 15 minutes.
  • The internal temperature should read 145 degrees F.
  • Baste with the barbecue sauce 10 minutes before the roasting is over.
  • Let rest for 10 to 15 minutes before slicing and serving.
